How we farm

Regenerative, plainspoken

Soil health equals human health. We work with nature, not against it

Pasture, not pavement

Birds move to fresh grass daily. Our goal is for ruminants to rotate through paddocks daily so pastures rest and regrow, and the herd stays healthy.

Pesticide-free, always

No herbicides on the pastures, no glyphosate, no shortcuts. We want to let the animals do the job they were designed to do.

Woodland pork

Our hogs root, forage, and grow slow in our wooded acres and help develop silvopasture that sequesters carbon and manages the woodlands.

Soil first

Our aim is to allow the animals to express their unique design functions (the sheepness of sheep, the pigness of pigs) with stewarded rotation and rest -- the slow stuff that builds real soil that's biodiverse and produces nutrient-dense food.

Growth with standards

We're building capacity carefully so more families can access real food without asking the land, animals, or people to carry more than they should.

Transparent sourcing

Where the feed comes from, who processes, what's in the cooler — ask us anything. We'll tell you.

Our story

Why we left the suburbs for the farm.

In June of 2025, Brian retired after a career as an Army Officer. Before that, he founded Captain Soup — a Eugene food company built on a simple truth: food is medicine. His own health journey and healing from severe illness taught him that what you eat and how it was raised are foundational to human health and thriving.

City on a Hill Farm is the next chapter of that mission. If food is medicine, then so is the soil it grows in, the animals that live on it, and the people who steward it.

Brian, his wife Cassie, their three farm-schooled kids, and the amazing on-farm residents and farm stewards are learning as they go — leaning on humility over hubris. Flowing with and learning from what God and His miraculous creation are teaching them. We're not trying to be anyone's hero. We're trying to engage in our Edenic calling and raise honest food for our neighbors, one batch at a time.

"The heart of man plans his way, but Yahweh establishes his steps." Proverbs 16:9

Questions

The honest answers.

If you don't see your question, email us — we read everything.

What does "pasture-raised" actually mean here?

Our meat birds live in floorless shelters that move to fresh grass every single day. They get sunshine, bugs, grass, and non-GMO grain. No confinement barns, no cages, no shortcuts.

Why don't I see final prices?

Meat is sold by the pound, so once your ordered producs are selected and weighed, the final total will be available. We'll email exact pricing before pickup so there are no surprises.

How does the $10 deposit work?

It holds your spot in the next batch and gets credited against your final balance at pickup. Refundable up to 14 days before harvest in case life happens.

Are you USDA certified?

We process under Oregon's small-scale poultry rules, which allow direct-to-consumer sales from the farm. Eggs and red meat will follow the appropriate state and USDA paths as those products come online.

Can I tour the farm?

Yes, We have one on-farm pick up day planned per week — currently Wednesdays from 2-4 pm.

Do you ship?

Onine Shipping pricing hasn't been established yet, but our food company Captain Soup ships frozen food out of our Eugene kitchen every week, so if you email info@cityonahillfarm.com We can hook you up with ODA or USDA processed meats!

How is City on a Hill connected to Captain Soup?

Same family, same mission. Captain Soup says soup is medicine. City on a Hill is where the ingredients come from — the soil, the animals, the stewardship that food-as-medicine actually requires.
